Tandoori chicken is a classic Indian meal made of marinated chicken that has been grilled in a tandoor, a cylindrical clay oven, with yogurt, lemon, and spices. The mixture of spices, whose flavor is further increased by toasting them in a pan before adding them to the marinade, gives the chicken its distinctive scarlet hue. Simple to make, tandoori chicken may be roasted in a high-heat oven at home to mimic the tandoori experience. This recipe, which was inspired by Food & Wine, features perfectly seasoned chicken with incredibly crisp skin.The clay tandoor oven, which is bell-shaped and also used to produce naan, or Indian flatbread, is where tandoori chicken gets its name.The meat of the skinless legs and thighs is cut to the bone in various places to help the marinade penetrate and the chicken cook more rapidly. The chicken is then marinated in a tenderizing mixture of yogurt, lemon juice, and spices.Either a lot of hot chiles or red food coloring are added to give the chicken its distinctive red color.However, if you must have your chicken bright red, feel free to add a small amount of red food color to the marinade. We have skipped using food dyes because we aren't great fans of them.

  • 3 tablespoons vegetable oil
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon ground turmeric
  • 1 teaspoon cayenne
  • 1 tablespoon garam masala
  • 1 tablespoon sweet (not hot) paprika
  • 1 cup plain yogurt (can sub buttermilk)
  • 2 tablespoons lemon juice
  • 4 garlic cloves, minced
  • 2 tablespoons minced fresh ginger
  • 1 teaspoon salt
  • 4 whole chicken leg quarters (drumsticks and thighs), skinless, bone-in

Making the marinade

Combine oil, curd, salt, lemon juice, red chili paste, ginger and garlic paste, chaat masala, and tandoori masala in a bowl. It has been thoroughly combined.

Apply the marinade to the chicken pieces, including the skin and the underside. The chicken should have small gashes made in them so the marinade can coat it well.

For 30 minutes, marinate the chicken pieces.

Use a griller or tandoor to char grill the chicken pieces. Oil-basting should be done frequently.

Present alongside onion rings and lemon wedges.

Prepare tandoori masala

In a bowl add ginger and garlic paste, red chill paste, chat masala, tandoori masala, oil, curd, salt and lemon juice. Mix it well.

Rub the marinade on the chicken pieces, over the skin and underneath it. Make small gashes in the chicken pieces for the marinade to coat it nicely.

Marinate the chicken pieces for 30 minutes.

Char grill the chicken pieces on a griller or tandoor. Baste with oil at regular intervals.

Serve with lemon wedges and onion rings.
